Leinenkugel’s Watermelon, Tomato and Cucumber Salad with Goat Cheese and Honey Lemon Dressing (Serves 4)
Salad
2 cups tomatoes, diced, ½ inch
2 cups seedless cucumber, diced
4 cups seedless watermelon, diced
1 oz. mint
Honey Lemon Dressing
2 tablespoons honey
2 tablespoons extra virgin olive oil
2 lemons, zested and juiced
1 oz. Leinenkugel’s Summer Shandy
Garnish
4 oz. goat cheese
8 romaine leaves
In a large serving bowl, mix the honey, extra virgin olive oil, lemons and Leinenkugel’s Summer Shandy. Mix well, and add chopped watermelon, tomato, cucumber and mint. Layer two romaine leaves on a salad plate or in a salad bowl, scoop a quarter of the mix onto the leaves and sprinkle goat cheese over top. Repeat three times.

ST. BALDRICK’S
After another successful March, Beverage Distributors once again went out of their way to participate in the community. Our team members got together and did a payroll deduction to help support finding a cure for childhood cancer.
Together, the team members, along with a very generous donation from Beverage Distributors, sent a check for $7,500 to St. Baldrick’s!
MEET OUR NEWEST TEAM MEMBER
RAY “BIG RAY” CLARK
This month we are featuring a member of our team who has been here for 28 years! Ray Clark, also know as “Big Ray”, has been employed at Beverage since September 3, 1996. He has helped our operations department out on countless occasions on top of being one of the best permanent company helpers we have!
Ray let us know that he’s not a big drinker, but if he had to choose, his favorite BDI product is Miller Genuine Draft. When asked what he liked about Beverage, Ray answered “it’s a great job, with great people and I have great relationships.” According to him, He’s happy to be alive and have a great job for 28 years.
Ray is looking forward to turning the big 5-0 this Thanksgiving. In his free time, Ray likes movies, eating good food, sports & dancing.
Ray- thank you for being such an important part of our team for so long!
